Cabernet-Braised Short Ribs over Olive Potato Pancakes are an appetizer that’s always dressed to impress.

Decadent and delicious, these little morsels showcase just how easily California Ripe Olives can be dressed up or dressed down, with a taste that’s casual enough for kids or elegant enough for entertaining.

Ingredients

Cabernet-Braised Short Ribs:

4 bone-in beef short ribs (about 2 pounds)

Sea salt and freshly ground pepper

3 tablespoons diced pancetta

3 clove garlic, minced

1/2 cup finely chopped onion

1/2 cup finely chopped celery

1/4 cup finely chopped fennel

1/4 cup finely chopped carrot

1 tablespoon flour

1 1/2 cups cabernet sauvignon

3/4 cup beef stock

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 can (2.2-oz.) sliced California Ripe Olives, drained

3 tablespoons tomato paste

Avoid Messy Problems this Holiday Season with Proper FOG Disposal

Sacramento, CA -- Sewer blockages and backups increase by up to 50 percent during the holidays due in part to the types of leftover food put down kitchen sinks and garbage disposals. People can avoid potentially messy problems and holiday havoc by properly disposing of fats, oils and grease (FOG).

When poured down the sink, FOG accumulates in sewer pipes restricting flow and ultimately causing blockages and backups in homes and neighborhoods. The Sacramento Area Sewer District and the City of Sacramento Department of Utilities have teamed up to keep drains clog-free during the holiday season.

“Holidays are one of the worst times of year for improper disposal of fats, oils and grease. Although delicious, holiday meals create notoriously bad waste,” said Jan Holm, SASD FOG Program Manager. “Everyone can help prevent these potentially messy problems by talking to guests and kids about the best way to clean up dishes and leftover food after a holiday meal.”

Mason has been in the kitchen with his mom and dad since the ripe old age of two and after winning numerous recipe contests, he is doing live cooking demonstrations at local fairs and festivals. This is a wonderful opportunity for families to get out and enjoy the gorgeous fall season and for other kids to see that cooking is easy and it's fun! "I love to make up crazy recipes. Sometimes they are good, sometimes not so much, but I always figure out how to make it good." Mason said.
